Clean Satay Stir-Fry
Ingredients:
500g Turkey Mince
1 carrot
1/2 red capsicum
1/2 head broccoli
Large handful green beans
1 tsp coconut oil
1/2 cup light coconut cream
4 Tbsp Natural peanut butter
1/4 tsp ground chilli powder
1/2 lime (squeezed juice)
1tsp minced garlic or 1 clove
Pinch Pink Himalayan Salt & Pepper
Serves: 4
Option: Serve on a bed of zucchini pasta or 1/2 cup cooked brown rice.
Method:
1. Pre chop all vegetables.
2. Brown mince in fry pan with coconut oil.
3. Mix in seperate bowl coconut cream, peanut butter, garlic, lime juice, chilli powder and salt & pepper.
4. Add your satay sauce to mince.
5. Add all vegetables and cook for another 10mins on a lower heat.
6. Serve on a bed of zucchini pasta or brown rice, top with one dollop of Greek yoghurt.
