Protein Pancakes
These are literally one of my favourite recipes! Definitely cures those sweet cravings and perfect for a post workout brekky. Best to only have once a week as it is a big meal and still quite calorie dense.
Ingredients:
2 egg whites
1/2 cup rolled oats
1/2 banana
1 heaped Tbsp cottage cheese
1 tsp vanilla essence
1 scoop protein powder
1/2 tsp cinnamon
1/4 cup almond or coconut milk
Method:
1. Blitz egg whites first with stick blender or in a small food processor.
2. Add all other ingredients and blitz until smooth.
3. Heat a small amount of coconut oil in a pan and cook 1 pancake at a time, flipping after bubbles start to form.
4. Top with Greek yoghurt, berries and maple syrup.
Tips: I use the 'Queens' sugar free maple syrup. It does contain artificial sweeteners so be aware of that and only use a small amount. I choose this as it is lower in calories, otherwise use 100% pure Canadian maple syrup, but still only drizzle a small amount.
