Peanut Butter Protein Pops

WARNING: Very easy to eat multiple..
Ingredients:
1 cup raw cashews
1 cup raw almonds
1/2 cup rolled oats
7 Medjool dates
2 Tbsp natural peanut butter
2 Tbsp rice malt syrup
1 scoop protein powder
2 Tbsp water (add more if you are find it hard to roll together)
Raw chocolate for rolling:1/2 cup melted coconut oil
1/4 cup maple syrup
1-2 Tbsp cacao powder
Method:
1. In a food processor blitz cashews and almonds until fine.
2. Add oats and blitz again.
3. Whilst processing add pitted dates one at a time.
4. Then add peanut butter, rice malt syrup and protein powder.
5. Add water (just enough that the mixture starts to stick together)
6. Roll into small balls and place on a tray or in container and freeze for 1-2hrs.
Raw chocolate:
1. In a saucepan on low heat melt coconut oil.
2. Add maple syrup and sifted cacao powder then immediately remove from heat.
3. Whisk until smooth.
Place balls on sticks and roll into freshly made chocolate. Chocolate should start to set quickly, either place balls back into freezer to store or in fridge.
